The large Cuban population brings a dose of Latin culture to the historic neighborhood of Ybor City. Established in the late 1800’s as a home to cigar manufacturers, the area has experienced a rebirth and is a vital area teeming with local artists and some very trendy restaurants and watering holes. You absolutely must try one of the hot Cuban sandwiches which are made hot and crisp. Similar to the immigrants who birthed Ybor City, the Greeks have done the same to Tarpon Springs. Built about the same time as Ybor City, Tarpon Springs was once the home to wealthy northerners who built elaborate Victorian mansions here. The nearby waters teemed with sponges and drew sponge divers from Greece. The sponge industry flourished and the Greek immigrants made themselves at home here. These divers put down roots and the Mediterranean influence is still felt in the atmosphere, architecture and cuisine. Be sure to stroll down to the docks to watch the boats unload their sponges.
